some people find it shocking when i say that my family is not big on sweets or desserts.
growing up, desserts were NEVER a part my family’s daily routine. sure, my parents treated my sister and i to ice cream from time to time, but dessert was never expected after a meal. the same was true about sweet treats.
now that i have a family of my own, it’s the same way. sweet treats are rare. sure, i bake cupcakes & cookies from time to time, but our pantry is not stocked with sugary snacks. nor do we serve dessert on a regular basis. it’s just not part of our routine and my children have grown up not to expect it. when it comes to something sweet, however, i do make one exception: COOL WHIP Whipped Topping.
pumpkin pie at thanksgiving is not pumpkin pie without a dollop of COOL WHIP. strawberry shortcake just isn’t strawberry shortcake without a dollop of COOL WHIP. and, hot chocolate, just tastes better with a dollop of COOL WHIP.
COOL WHIP is a staple in my household. i appreciate it’s freezer-friendliness…COOL WHIP is always ready to go when i need it.
we’re on the verge of summer here in southeastern virginia and the berries have been plentiful. there is never a shortage of strawberries & blueberries in our home. to us, fresh fruit makes the perfect everyday treat. we eat berries for breakfast, snacks, and even…dessert. yes, despite what i said earlier about dessert, i DO treat my family from time to time. our desserts almost always involve fruit. our favorite way to enjoy fresh picked berries, juicy peaches or homemade cinnamon apples is with a generous dollop of COOL WHIP.
there’s just something about COOL WHIP that makes things special. it’s an added touch that shows someone that you care. my kids enjoy it because it makes their everyday treat a bit more magical. plus, THEY get to scoop their dollop of COOL WHIP so they have fun while eating their snack or dessert. and, who am i kidding, sometimes it’s just nice to enjoy a spoonful of COOL WHIP.
my family uses COOL WHIP in a simple, straightforward way; however, there are numerous recipes that include COOL WHIP. not just during the summer, but throughout the year, my family attends many cookouts, dinner parties and other functions that require us to bring a dish. i’m always on the lookout for a delicious, new recipe, but there are also some “old faithful” recipes that are near and dear to my heart. one of those “old faithful” COOL WHIP recipes is watergate salad. my grandmother {i call her mamaw} makes watergate salad…it wasn’t my favorite as a child, but seeing it, smelling it, and tasting it brings back a flood of childhood memories spent at my mamaw’s house in mississippi.
watergate salad {adapted from kraft recipes}
1 20 oz. can of crushed pineapple in juice {do not drain}
1 package of pistachio flavor instant pudding
1 cup miniature marshmallows
1/2 cup chopped pecans
1-1/2 cups thawed COOL WHIP whipped toppingcombine first FOUR ingredients in a large bowl. stir in COOL WHIP. refrigerate for one hour.
my children have yet to try watergate salad, so i’m looking forward to making it this summer and treating my kids to something special from my childhood.
