Coconut Macaroons

there's something about the time change that flips an internal switch in my body.  that switch?  it's my baking switch.  don't get me wrong, i bake throughout the year, but there is something about the fall and winter that causes me to go into baking overdrive. but, the ironic thing?  i'm not really a fan of sweets.  go figure, huh? in the past, i've made cheesecakes , cakes, pies, and cookies.  of all those things, cookies are my least favorite to make unless i'm making coconut macaroons. do NOT confuse these with macarons...that's a different kind of cookie.  coconut macaroons are a BIG HIT with my family.  they are easy to make, super delicious, and not too sweet.  it's the perfect type of cookie for dipping and they also make a fabulous gift.  the recipe that i … [Read more...]

cinnamon roll cake.

cake pops.they're a hot item. i blame bakerella. {seriously, though, i want to be bakerella.}and, i suppose we can all channel our inner bakerella. {watch out, i might say bakerella again....bakerella, bakerella, bakerella...}where was i? oh, yeah...cake pops.whenever i talk about cake pops {or cake balls, too, for that matter} i'm always asked, "how do you make them?" there are a gazillion & one tutorials for cake pops on the internet, but i'll share with you my version. it's not fancy. it's actually kind of easy. but, i'll warn you now, it does take some practice. i'm definitely not at the level that bakerella is, but i can certainly scoop, roll & dip pretty darn well if i do say so myself.first of all, decide on a flavor of cake & frosting. you could do this with scratch … [Read more...]
