“better than store bought” granola bars

Homemade Granola Bars

many months ago, when my parents were in the process of moving, i inherited a bunch of their pantry staples including a LARGE TUB of quick cook oats. we love oatmeal & i also use oatmeal in my meatballs, but i wanted to do something else with them...but what? i'm honestly not sure why i haven't made homemade granola bars before, but - believe me - i will keep making them.  seriously, they are SO MUCH BETTER than the store-bought variety.  depending on which ingredients you have on hand versus what you need to buy, yes, homemade granola bars can be more expensive than picking up your favorite variety at wally world. Coconut Macaroons

there's something about the time change that flips an internal switch in my body.  that switch?  it's my baking switch.  don't get me wrong, i bake throughout the year, but there is something about the fall and winter that causes me to go into baking overdrive. but, the ironic thing?  i'm not really a fan of sweets.  go figure, huh? in the past, i've made cheesecakes , cakes, pies, and cookies.  of all those things, cookies are my least favorite to make unless i'm making coconut macaroons. do NOT confuse these with macarons...that's a different kind of cookie.  coconut macaroons are a BIG HIT with my family.  they are easy to make, super delicious, and not too sweet.  it's the perfect type of cookie for dipping and they also make a fabulous gift.  the recipe that i … [Read more...]

Menu Monday

your eyes do not deceive you.  i'm actually participating in a meal planning link-up.  i don't know why it took until last week to start planning our weekly meals, but whatever.  the point is that now on sunday mornings i plan our menu for the week & i hit the grocery store that very same morning.  although i love shopping at trader joe's & the fresh market {and soon, whole foods will be on my list}, i recently rekindled my love-hate relationship with wal-mart.  honestly?  it's just easier to shop there early on a sunday morning because it's so close to the house. not that this is necessary information, but while i shop i use my cell phone calculator to keep track of my purchases.  i try to stick as close to $100 as i can.  $100 per week on groceries might seem steep to … [Read more...]
