two side dishes for your thanksgiving table.

Sweet Potato Casserole

thanksgiving is nearly upon us and, if you're anything like me, you're making a shopping list for your turkey day feast.  {i know, i know, the big day is only a couple of days away...}  this year, my husband and i are having a big dinner with his family, but we are ONLY responsible for the sides.  well, the sides and dessert, but still... WOO HOO!  we're not cooking the turkey this year! normally, i make it a point to make sure that my pantry is well-stocked and that my refrigerator has all of the necessary ingredients.  sometimes, however, i run out of a product or i just don't have enough of a certain ingredient.  fortunately, substituting an ingredient is not as daunting as it seems...especially if you have a Unilever Spread like Country Crock on hand. Coconut Macaroons

there's something about the time change that flips an internal switch in my body.  that switch?  it's my baking switch.  don't get me wrong, i bake throughout the year, but there is something about the fall and winter that causes me to go into baking overdrive. but, the ironic thing?  i'm not really a fan of sweets.  go figure, huh? in the past, i've made cheesecakes , cakes, pies, and cookies.  of all those things, cookies are my least favorite to make unless i'm making coconut macaroons. do NOT confuse these with macarons...that's a different kind of cookie.  coconut macaroons are a BIG HIT with my family.  they are easy to make, super delicious, and not too sweet.  it's the perfect type of cookie for dipping and they also make a fabulous gift.  the recipe that i … [Read more...]

Card style: Handwritten Love

i know, i know...get a grip, michelle, halloween hasn't even happened yet.  and, i get it.  i'm definitely NOT one who likes to a) plan too far in advance or b) acknowledge christmas before halloween.  trust me...i'm as "bah humbug" as they come.  but, NOW really is a good time to start thinking about holiday cards.  why?  well, for starters, the weather isn't too cold for pictures outside.  plus, those changing fall leaves photograph VERY well {but that's just my opinion}.  also?  tiny prints has revamped their holiday card collection...some of which is available on their brand new Premium DoubleThick™ Matte Paper.  whether your taste in holiday cards are traditional or you like to show off your family with a collage of photos, tiny prints has something for every one for the … [Read more...]

for the holiday cookie swap…

thanks to duncan hines for sponsoring my writing. there's no limit to the baking possibilities, so grab your favorite duncan hines mix and comstock or wilderness fruit fillings and bake on!  www.duncanhines.comi'm ashamed to admit this, but i really don't do much holiday entertaining. we love having cookouts in the summer, but once the cooler weather hits and the hustle & bustle of the holidays takes over, well, we seem to be busy doing other things {read: going to parties and other holiday festivities}. but, being busy does not mean that i don't have time to satisfy everyone's sweet tooth.it's no secret: i love to bake. i also love to share my goodies with friends & family. during the holidays, i am always in the kitchen creating something whether it's cupcakes for my children to … [Read more...]
